1. Chicken (whole or cut)
2. Salt

5. Water with Chicken Broth
How to do Poach Chicken:
1. In a pan, kettle of whatever it is you are comfortable using with, estimate the amount of water to use for poaching. Be sure the liquid should cover the chicken for around an inch. Bring the liquid to boil.
3. For every quart of liquid, add a cup of chopped onion, a cup of carrot and a cup of celery.
4. Add the black peppercorns.
5. Season the liquid with salt lightly.
6. Lower the heat to a bare simmer.
7. Add the chicken pieces or whole chicken. You have to make sure that everything is submerged.
8. Cook the chicken for 15 to 20 minutes (cut chicken) and around 30 to 45 minutes for whole chicken.
9. Turn off the heat and let the remaining heat of the liquid cook the chicken thoroughly.
10. Remove the chicken. You can make fun with it while its hot or you can put it on fridge for later purposes.
